Ingredients

  • Potato- 1 Large Size
  • Onion- 2 Large Size
  • Carrot- 1 Medium Size
  • Capsicum- 1 Large Size
  • Green Peas (Matar)- One Small Bowl
  • Green Beans- 100 Gram
  • Cauliflower (Gobhi)- 100 Gram
  • Beetroot- 1 Medium Size
  • Curd- 1 Bowl
  • Ginger- 1 Inch
  • Garlic- 6-7 Piece
  • Biryani Masala- 2 Tbsp
  • Coriander Leaves- 1 Small Bowl
  • Green Chili- 5-6 piece (Optional)
  • Whole Spices (Khade Masale)- 1 Tbsp
  • Lemon Juice- 2Tbsp
  • Oil- 1  Cup
  • Rice- 3 Cup
  • Water- 5-6 Cup
  • Milk- 3 Tbsp
  • Saffron (Kesar)- 2-3 Threads
  • Kewra Water- 2 Tbsp
  • Salt- 6-7 Tbsp or as per requirement
  • Ghee- 2-3 Tbsp

STEP-1
Preparing the Marination for Veg Biryani

To make Veg Biryani, first of all we will keep curd in a bowl, then we will add ginger garlic paste, Biryani Masala, Coriander Powder, Cumin Powder, Red Chilli Powder, Turmeric Powder and coriander leaves and mix it well.

Marinating the Vegetables with Spices

Now when our spices are mixed well, we will add all the vegetables one by one to the masala/paste and also add salt and after mixing everything we will keep it aside for marinating for 15-20 minutes.

Soaking the Rice for Vegetable Biryani

Friends, further, to make delicious vegetable biryani, we will soak 3 cups of rice for 1 hour in advance.

STEP-4
Preparing Crispy Barista (Fried Onions) for Veg Biryani

Guys, now we will prepare the barista for veg biryani which is a very important step in making our tasty dish.

To make Barista, we will cut the onion into slices and then keep it in a pan/kadhai with 1 cup of oil till it gets well heated and then when our oil gets well heated, we will put our onion in the oil for crispy frying and will fry it on medium flame till it becomes brown.

Friends, here as soon as our onion starts turning slightly brown, we will lower the flame of the gas and keep stirring the onion until it turns brown. With this our onions will become golden brown and crispy too.

Guys, now when our barista is ready, we will take it out on a plate and keep it aside to cool down so that it does not become soft. Friends, here is our leftover oil, we will not throw it away, rather we will use that oil in the entire veg biryani.

STEP-5
Cooking the Rice with Whole Spices

Now we will put 4 cups of water in a pan and in it we will add whole spices, bay leaves and 2 Tbsp oil from the oil in which we fried our onions and then after that we will put our rice which we had soaked in water 1 hour ago, along with that we will add 2 Tbsp salt & lemon juice from above to it.

STEP-6
Partially Cooking and Draining the Rice

Now we will cook it for about 7-8 minutes on high flame. Now our rice is semi cooked. That means we have to cook the rice till about 60%. After that we will drain its water and take out the rice in a plate to cool down.

Cooking the Marinated Vegetables with Oil

Now our vegetables are also well marinated, so now we will take 2 tbsp oil in a pan and cook the marinated vegetables well and in which we had browned the onions, we will cook half of the onion here along with the vegetables. 

To ensure that the vegetables do not remain raw, you can add half a cup of water here, this will prevent the vegetables from sticking to the bottom and they will also cook well. Friends, here we are using the oil which was left over from our onions.

STEP-8
Layering the Semi-Cooked Rice and Vegetables

Friends, now our vegetables are cooked well, we will take out half the vegetables from them in a bowl and then add a layer of our semi cooked rice in it and along with it we will garnish it with some crispy brown onion, carrot, beetroot, 2 green chillies finely chopped and coriander leaves.

Creating Layers & Adding Natural Color to Veg Biryani

Then after that we will put the little vegetables that we had taken out separately and then make a layer of the remaining half rice. Friends, due to the formation of layers in biryani, the vegetables get mixed well with the rice.

Now the layers of rice and vegetables are well prepared, to bring natural colour to the biryani we will make a mixture of milk, kewra water, saffron and beetroot juice and add it on the top of rice. Next, in the same process, we will garnish it with sliced ​​chilli, carrot, beetroot, crispy brown onion, and coriander leaves. 

Kewra Water is optional here, if you don’t have kewra water, then there is no need to worry, even if you make it without it, the biryani will be very tasty. Friends, we will not add color here, rather the beetroot juice and saffron which we had added to the milk will give a light reddish color to our biryani.

STEP-10
Steaming Vegetable Biryani and Adding Ghee

After garnishing our veg biryani, we will cover it with a foil paper and let it steam for about 5 minutes on a low medium flame. Friends, now our biryani is ready, we will remove the foil paper and then add about 2 to 3 spoons of ghee on top of the biryani and then slowly mix it in the whole biryani with the help of spatula. You can also use ghee here while steaming the biryani.
