Ingredients
- Chickpeas (Chole )- 1 Cup
- Onion- 2 Medium Size (Fine Paste)
- Tomato- 2 Medium Size (Fine Paste)
- Ginger- 2 Inches
- Garlic- 6-7 Pieces
- Whole Spices (Khada Masala)- 1 Tbsp
- Oil- 2 Tbsp
- Green Chilli- 2-3 Piece
- Coriander Powder- 1 Tbsp
- Red Chilli Powder- 1 Tbsp
- Turmeric Powder- 1 Tbsp
- Dried Fenugreek Leaves (Kasuri Methi)- 1 Tbsp
- Salt- 2-3 Tbsp
- Water- 4-5 Cup
STEP-1
Soak and Boil the Chole (Chickpeas)
To make market style chole, first of all we will take chole (chickpeas) in a vessel and leave it to soak for about 8 hours. Now when our chole will be soaked properly, we will put all the chole in a pressure cooker and add 2 cups of water and 1 tsp salt in it and keep it on medium flame till 4-5 whistles come.
STEP-2
Prepare the Chole Masala
Now when our chickpeas are boiled well then we will prepare the chole masala, for which we will take a pan on the gas and put approximately 2 tbsp oil in it. As soon as the oil gets hot, we will add the whole spices in it and then after that we will add the ginger garlic paste and cook it on medium flame till it turns light brown.
Friends, we will use coarsely ground ginger and garlic here because it gives the chickpeas (chole) dish a mouthwatering taste.
STEP-3
Cook Onion and Tomato Paste
Now the ginger garlic paste will become light brown, after that we will add onion paste and cook it well on medium flame so that the smell of onion does not remain.
Now as soon as our onion turns light brown, we will add tomato paste in it and stir it well and cook it till the masala oil releases. You can also use fine chopped onion and tomato here.
STEP-4
Add Spices and Cook
Now that our paste is cooked well, we will chop the green chillies and add them here and mix them well with the paste. Along with this, add 1 Tbsp red chilli powder, 1 Tbsp turmeric powder, 1 Tbsp coriander powder, Half Tbsp Salt and 1 Tbsp Kasuri methi and mix them well and cook on a low medium flame for 4-5 minutes so that our spices get cooked well.
Friends, here we will add half cup of water to cook the spices properly. We will not add more salt here because we had already added salt while boiling the chickpeas. So if you feel that the salt is less or more, you can add more or less later as per your taste.
STEP-5
Add Chole (Chickpeas) and Cook
Now when our spices are cooked well, we will put chole in it and cook it for about 7-8 minutes on medium flame. Friends, here we will also put the water that we had put while boiling the chole in the pan along with it. Friends, if you find the chole gravy too thick, then you can make a cup of hot water and add it to the chole.
