Ingredients

  • Cauliflower (Gobhi) – Half kg
  • Potatoes – 2 medium-sized
  • Onion – 1 large-size
  • Tomato – 1 large-size
  • Garlic – 7-8 cloves
  • Ginger – 1-2 inches
  • Cumin Seeds – 1 tbsp
  • Cinnamon Stick (Dalchini) – 1-2 pieces
  • Bay Leaves – 2 leaves
  • Cloves – 3-4 pieces
  • Black Pepper – 3-4 pieces
  • Red Chilli Powder – 1 tbsp
  • Turmeric Powder – 1 tbsp
  • Coriander Powder – 1 tbsp
  • Cumin Powder – ½ tbsp
  • Black Salt – 1 tbsp
  • Water – 1 cup

STEP-1
Preparing Vegetables & Ingredients for Aloo Gobi Recipe

To make aalu gobhi ki sabji, first of all we will cut the gobhi properly and wash it. Friends, here we have taken approximately half a kg of gobhi. Now after this we will prepare all the ingredients. So friends, here we have taken 2 medium size potatoes which we have cut into medium size pieces and along with it 1 large size tomato puree, 2 medium size onions which we have cut into somewhat thick pieces, 7-8 garlic cloves and a small piece of ginger. Friends, here we have cut the ginger into very thin slices and have chopped the garlic finely and kept it aside.

STEP-2
Preparing the Seasoning and Spice Mixture

Friends, now for seasoning the aalu gobhi ki sabji, we have taken 1 tablespoon cumin, one piece of cinnamon 3-4 cloves, black pepper and 2 bay leaves. Friends, now in a bowl we will put 1 tbsp red chilli powder, 1 tbsp turmeric powder, 1 tbsp coriander powder, half tbsp cumin powder and then add 5-6 tbsp water and mix it well.

Heating the Oil in the Pan for tasty Aalu Gobhi Ki Sabji

Friends, now that all our ingredients are ready, we will place the pan on the gas and pour about half a cup of oil in it.

Frying Potatoes & Cauliflower to Make Tasty Gobhi Ki Sabji

Now as soon as the oil gets hot, we will put potatoes in it and cook them till almost 70%. Friends, now after this we will put our cauliflower in that oil and fry it well. Friends, here we have also cooked the cauliflower till almost 60%.

Removing Excess Oil & Adding Seasoning in Aloo Gobi Sabji

Now after frying the potatoes and cauliflower, we will leave 2-3 tablespoons of oil in the pan and we will take out the rest of the oil in some other vessel. So friends, now we will add the seasoning of the spices in it.

Sauteing Ginger-Garlic, Onion, and Tomato Puree

Friends, now after seasoning, we will put ginger garlic in it and cook it till it becomes light brown. Friends, after ginger garlic turns light brown, we will put onion in it. Now here we do not have to cook too much onion, so when our onion starts becoming light brown, we will put tomato puree in it and cook it while mixing it well.

Adding the Spice Mixture & Cooking Aalu Gobhi Ki Sabji

Friends, our tomato puree is cooked well, so now we will add the masala which we had mixed in a bowl and cook it well. Friends, you can also add about half a cup of water here, this will ensure that the masala does not stick to the bottom of your pan and will also cook well.

Adding Black Salt and Cooking Aloo Gobi Sabji

Now we will put almost a tablespoon of black salt in it and mix everything well. Friends, here we have added almost half a cup of water and cooked it well.
