Ingredients
- Potatoes – 6-7 Medium Size
- Tomato- 1 Large Size
- Cumin Seeds (Jeera)- 1 Tbsp
- Coriander Seed- 1 Tbsp
- Cloves- 2-3 Piece
- Black Pepper- 2-3 Piece
- Kasuri Methi (Dried Fenugreek Leaves)- 1 Large tbsp
- Red Chili Powder- 1 Tbsp
- Coriander Powder- 1 Tbsp
- Cumin Powder- 1 Tbsp
- Turmeric Powder- ½ Tbsp
- Salt- 2 Tbsp
- Green Chilies- 2 Piece
- Bay Leaves- 2 Leaf
- Oil- 2 Tbsp
- Asafoetida (Hing)- 1 Tbsp
- Amchur Powder (Dried Mango Powder)- 1 Tbsp
- Water – 3-4 Cups or as needed
STEP-1
Boil and Lightly Mash the Potatoes
Friends, to make Bhandaare Wali Aloo ki Sabji, first of all we will put the potatoes in a pressure cooker to boil and when our potatoes are boiled properly, we will remove their peel and mash them lightly. Friends, here we do not have to mash the potatoes too much.
STEP-2
Heat Oil, Add Spices, and Cook Tomatoes
After that we will keep the oil in a pan to heat up and as soon as our oil gets hot we will add cumin seeds, coriander seeds, cloves, black pepper together in it and then add green chilli and bay leaf on top of it.
And as soon as our spices turn light brown, we will add tomatoes in it and cook it well. After that we will add 1 tbsp asafoetida and mix it well with the help of spatula.
STEP-3
Add Mixed Spice and Cook with Tomatoes
Now, we will take a bowl and put mixed spices in it (1 Tbsp Red Chilli Powder, 1 Tbsp Turmeric Powder, 1 Tbsp Coriander Powder and 1 Tbsp Jeera Powder). Further, we will add almost 4 large tablespoons of water and mix all the spices in the bowl and then as soon as our tomatoes melt, we will put the mixed spices in the pan and cook them well.
After cooking the spices for 2 minutes, we will add 1 tablespoon of Amchur Powder (Dried Mango Powder) and dried fenugreek leaves and mix it well with the spices and cook it.
STEP-4
Add Mashed Potatoes and Water
Friends, our spices are cooked well here. Now we will add the mashed boiled potatoes and mix them well with all the spices. And then after that we will add 3 cups of water. You can add water here as per the thickness.

Garnish And Serve
