Ingredients

  • Potatoes- 6-7 Medium Size
  • Ginger- 1 Small Piece grated
  • Asafoetida (Hing)- 1 Small Tbsp
  • Amchoor Powder- 1 Small Tbsp
  • Green Chilies- 3-4 Piece- Fine Chopped
  • Fenugreek Leaves (Kasoori Methi)- 1 Small Tbsp
  • Oil-2-3 Large Tbsp
  • Cumin Seeds (Jeera)- 1 Tbsp
  • Coriander Powder- 1 Small Tbsp
  • Cumin Powder (Jeera Powder)- 1 Small Tbsp
  • Turmeric Powder- 1 Small Tbsp
  • Chili Flakes/Crushed Red Chili- 1 Tbsp or as per taste
  • Salt- As per requirement
  • Coriander Leaves- For Garnishing

STEP-1
Boiling and Preparing Potatoes for Jeera Aloo

To prepare Jeera Aloo or tasty aloo ki sabji, first, we will keep the potatoes in a pressure cooker till 2-3 whistles. Once our potatoes get boiled, we will keep them aside and let them cool. Then, we will peel the potatoes and cut them in the shape of medium size boxes.

STEP-2
Sauteing Cumin Seeds, Green Chili, Asafoetida
and Grated Ginger

Our next step will be to saute cumin seeds, green chili, asafoetida & grated ginger. For this, we will take approximately 3 tablespoons of oil in a pan. When our oil is properly heated, we will add cumin seeds and will wait till it gets brown. Then, we will add green chili, asafoetida & grated ginger and saute them until it also gets brown.

Mixing Potatoes with the Sauteed Spice Mixture

Now, our mixture of cumin seeds, green chili, asafoetida & grated ginger have been properly sauteed. In the next step, we will add the potatoes in the pan and mix the potatoes with the sauteed mixture with the help of spatula. We should keep in mind that we need to flip the mixture gently so that potatoes get equally coated with the spices.

Moving to our next step, after waiting 7-8 minutes, we will add 1 small tablespoon of cumin powder, 1 small tablespoon of coriander powder, 1 small tablespoon of turmeric powder, 1 large tablespoon of chili flakes, 1 small tablespoon of amchur powder and salt to the pan. After that, we will mix our potatoes with the spices properly and keep in mind that the potatoes don’t break and the spices are equally mixed. Guys, we will use the medium flame of the gas in this process.

Adding Fenugreek Leaves and Finalizing the Jeera Aloo

Next, we will add fenugreek leaves and mix it well. Dried fenugreek leaves are the secret part of our spicy jeera aloo recipe which will make jeera aloo more delicious. Dear friends, now after 2 minutes, we will turn off the gas flame to keep the potatoes soft and of good taste. SECRET TIPS:

  • If you do not have amchur powder, you can use 1-2 tablespoons of lemon juice in place of amchur powder. This will also give your dish a good taste. 
  • Do not over-boil the potatoes because they might break if boiled too much.  
  • Keep in mind that whenever you make jeera aloo, use chili flakes or crushed red chili instead of red chili powder. Chili flakes or crushed red chili gives the potatoes a much better taste.
